Baiyue Tea Society is managed by TRISHAN social enterprise, an official social enterprise located in the north of Vietnam which is established under Vietnam Enterprise Law and operate as a commercial organization but must commit to investing at least 51% of annual profit in registered social or environmental goals by law. TRISHAN social enterprise commits to reinvest the entire profit generated to improve capacity for local and local indigenous knowledge conservation.

TEA
Our region is considered as homeland of snow shan tea, where the tea plant has its origins, where tea grows "wild", thriving and interleaving herbal plans as cinnamon, cardamom, species of the genus panax, etc in the high mountain rangers covered with snow and dew. The mountain ranges surrounded by peaceful villages of Baiyue tribes, these tribes, with a life style, a language, traditions, moral standards and a specific foodstuff.
The general name for ancient wild tea trees, called: Shan tea (Shan: mountain, all free from any human intervention other than harvesting, the leaves from these Shan tea trees are as natural as nature intended. Broad leaves and deep roots give the teas an added depth rarely found in farm grown equivalents. Unlike tea trees cultivated in midland plantations, Shan tea trees naturally grow on high mountains. Ethnic people have to climb trees to pick the fresh buds and process them very rustically to preserve their signature natural taste and flavor. There are some different wild tea plants of Shan tea in our mountain range, like: Snow Shan tea, White Fairy tea, Dragon tea and Red Snơ Shan tea

A tea specialist from the former Soviet Union – Academician K.M. Djemmukhatze of the Baku Institute of Biochemistry –wrote: “I have traveled through 120 countries that have tea production, but I have never seen tea trees as old as those in Suoi Giang. Are they the ancestors of all tea trees? A bowl of green tea here combines the 18 bitter tastes of all the other teas in the world”. Djemmukhatze came to Suoi Giang in the 1960s to study its tea.
Processing and classification

Tea is generally divided into categories based on how it is processed. At least six different types are produced:
White: wilted and unoxidized;
Yellow: unwilted and unoxidized but allowed to yellow;
Green: unwilted and unoxidized;
Oolong: wilted, bruised, and partially oxidized;
Black: wilted, sometimes crushed, and fully oxidized (called Hồng Trà), "red tea" in Chinese and Vietnamese
Post-fermented (Dark): green tea that has been allowed to ferment/compost in bamboo tube (called: Trà Ống Lam or Pu'erh tea)"black tea" in VietnameseFlavoring of these teas have a strong relation to the seasons, and the seasonality of the product, and in this context it means "the first appearance of a certain tea in the term of the current year. Baiyue culture highly esteems enjoying the earliest food before it is in season. This comes from the belief that whatever has been harvested or created first is the purest, most rich, and nutritional product. And this line of thinking is no different for tea.. The 24 Solar Terms transmitted through generations, the element has profoundly influenced Baiyue tribe’s way of thinking and code of conduct. Upon a specific solar term, people spontaneously arrange farming and daily routine as well as basic necessities of life. Thus this knowledge continuum of time is sustained through a variety of ritual practices and folk activities in determining the times of planting, harvesting, and festival occasions. Thereby the 24 Solar Terms is an important carrier of Baiyue tribes cultural identity.
Vietnamese lunar calendar begins with the year 2637 B.C. It has 12 months of 29 or 30 days each, and the year totals 355 days. The Vietnamese lunar calendar is not the official calendar of Vietnam, but it is no less important than the regular calendar: it determines the date for the Vietnamese traditional holidays. It also decides other things such as when to get married,have a funeral, when to open a business, or when to relocate.
A lunar month is determined by the period required for the moon to complete its full phasic cycle of 29 and a half days, a standard that makes the lunar year a full 11 days shorter than its solar counterpart. This difference is made up every 19 years by the addition of seven lunar months. The 12 lunar months are further divided into 24 solar divisions distinguished by the four seasons and times of heat and cold, all bearing close relationship to the yearly cycle of agricultural work.
A Vietnamese/Baiyue year is named after the combination of one of the names of the ten heavenly stems and one of the names of the 12 earthly stems,
The Vietnamese like the lunar calendar because they can be sure of a full moon on the 15th day of each month. The lunar calendar can be quite precise and synchronized with the seasons so long as correct astronomical data are used.
the 24 points in the Baiyue calendar that match particular astronomical events and signify some natural phenomenon, followed by how the tribe use the calendar as guidance for their agricultural activities and celebrations.

Vernal equinox (Xuân Phân): The day when daytime and night are of approximately equal duration. The time is very significant in agriculture, which means mid-spring. After this day, the position of the Sun gradually shifts to the Northern Hemisphere. The day feels longer, the night shorter. The weather is gradually turning warm and sunny, no longer the cold of winter.
Clear and bright (Thanh Minh): The sky is clear, the clouds are clear, the weather is beautiful for everyone to worship Thanh Minh. The climate is ideal, warm, cool, all life is very fresh, trees are budding.- Chợ tình Khâu Vai (The Khau Vai Love Fair is a traditional market of ethnic people that often happens on 26/3 (Lunar Calendar). This could be one of the most unique fair in Vietnam and in the world since the product sold here is “love”. The fair is a place for people in the area not only to come and enjoy the festive atmosphere, but also to flirt, date and find their true love. Although the fair is located in the valley of Nung communities, it attracts people from many other areas such as H’Mong, Dao, Tay… and ages vary from youth to elderly.)

Grain rain (Cốc Vũ): The period of torrential downpours. At this time, the climate has changed, a sign that the weather is about to turn summer. The great rains make all things grow, the trees are lush, the soil is fertile and fresh.
Start of summer (Lập Hạ): Summer begins with rapidly rising temperatures. It was hot and sunny, many places began to appear storms, thunder and lightning due to temperature changes. Trees in this season also grow fast and develop well.Grain full (Tiểu Mãn): Grains are plump
Grain in ear (Mang Chủng): Awns (beard of grain) grow, the crops are in season, agriculture develops well, rice and cereals are full of life. The weather is hot and humid with occasional showers. At this point people can see the rising ridges of the stars.
Summer solstice (Hạ Chí): Summer extreme (of sun's height). It is good time to collect herbal leaves
Minor heat: (Tiểu Thử): At this time, the weather seems to be milder, the sun is mild. But the feeling is still hot, but not the hottest. This is the time when the air is quite hot, possibly accompanied by floods and thunder
Major heat (Đại Thử): This is a time when the climate is quite harsh, extremely hot and humid, leading to many storms and tropical depressions.
Start of autumn (Lập Thu): The weather is extremely beautiful, cool, gentle breeze and cooler in the evening. This is the period that begins to remind people of the scent of nuggets and chrysanthemums of autumn.

Cold dew (Hàn Lộ): Cool weather. With countries in the Northern Hemisphere like Vietnam at this time will be far from the sun, receiving less sunlight, so the climate gradually turns cold, it gets dark earlier.

Start of winter (Lập Đông): Beginning of winter, this time begins to appear many waves of cold air from the north. The temperature is low and cold and the days are short and the nights are long.

Major cold (Đại Hàn): It means it's very cold. The climate is cold, the temperature drops to the lowest, cold to the bone. Trees and animals are also affected a lot, there is a cold wave that causes them to die a lot.
